It is quite a fine fleshed fish, and I am unaware of its ever being smoked - certainly not commercially. The fish is quite a bit lighter than a haddock or cod. Hitherto in our house, the ONLY way to cook pickerel has been to pan fry it in butter, or to coat it with cornmeal or flour and then pan fry it in butter. What a great dish! Curry and smoked fish being low on my list of things to cook/eat, and I wouldn't have tried kedgeree in a thousand years, but I had a larger fillet of pickerel than I have ever seen, and I was desperate for a light supper after hungry and tired children returned from their swim class. Suffice to say it was a hit. Thank you so much for posting this recipe.
